Cardamom is a member of the ginger family and provides a very complex flavour, which can be described as a herbal warmth like a fragrant cross between eucalyptus, mint, and pepper—more citrusy than fennel and sweeter than cumin. Cullinary uses range from curries to soups to baked goods - even cheesecake. 

It is frequently used in gin production to produce flavours that are sweet, spicy, citrusy and grassy.
