Grains of Paradise, or Guinea Pepper, is an aromatic spice resembling peppercorns, but it is actually related to ginger. It is commonly used in gin, and is though to intensify other flavours as well as adding its own fragrant spice.
With a complex flavour, which is woody, peppery, herby, with a warm subtle heat, carrying notes of cardamom, coriander, citrus, ginger, nutmeg, and juniper, Grains of Paradise is also used in cooking and baking. It is the key ingedient in the production of Scandinavian spirit aquavit.
