White pepper is the seed of the ripe fruit of the pepper plant. Ripe red pepper berries are subjected to retting, which is a process of soaking the fruit in water for about a week, during which time the flesh of the frruit softens and decomposes. The seeds are then rubbed to remove the residual fruit and dried.
